From my experience, basic Demoman strategy begins with three simple words: Spam Moar Nades!! (and work your way up to sticky bombs) When the crowd tries to rush your territory, blow as many of them to smithereens as you can. Your job is not to charge at the enemy, but cover the area in explosives to keep them back

For practice, I recommend the Saigns Viaduct server. It's a pretty shitty server for serious play, but the legions of retarded Heavy bots will give you plenty to shoot at
